From Common Coffee
Ethyl acetate, made from sugar cane fermentation, is used to decaffeinate green coffee. The beans are soaked in a water-ethyl acetate mix, which removes the caffeine. The process is repeated until the beans are at least 97% decaffeinated. Finally, steam ensures no residue is left.
