We focus on small groups and farmer education, emphasizing good practices like picking only ripe cherries. Freshly harvested cherries are carefully sorted and placed on raised African beds to prevent fermentation, with drying lasting 21–28 days. Key steps include: picking fully ripe cherries, turning cherries on the beds at least six times daily, and using a shallow bed depth (4 cm max). This precise drying process results in coffees that are intensely fruity yet exceptionally clean, avoiding the over-fermented flavors sometimes found in naturally processed coffees.
