The anaerobic process can release a spectrum of wondrous flavors, ranging from super boisterous and boozy to surprisingly clean and quaffable. This one, from Nueva Segovia, Nicaragua, sits somewhere in between - fruit-forward and sweet. Roasted for filter, I'd recommend taking it black.
