Brazil's coffee farms, known for their vastness, have largely adopted mechanical harvesting due to the country's flat terrains and high labor costs. This shift enables more selective harvesting of ripe cherries, improving specialty coffee quality. On uneven sections, farms often use a 'manual mechanized' method with a vibrating rake, the derricadeira, to collect ripe cherries more precisely. These harvesting advancements have bolstered Brazil's focus on cup quality. Following harvest, cherries are sun-dried on patios in thin layers, with careful turning for even drying and flavor enhancement.
