The anaerobic natural process gives the coffee its distinct, almost pastry-like depth by fermenting the cherries in sealed tanks, building layers of complexity and texture. Bright, sweet and just a little funky. It's the kind of cup that makes you stop and smile.

We chose this coffee a year ago from a lineup of samples provided by our friends at Bette Buna. This coffee was everyone’s favourite! It showcases classic Ethiopian character, but with a vibrant twist: a cocktail of juicy complexity. Think ripe peaches and sweet strawberries! If you’re a lover of a fruit-forward profile then you’re in for a treat. This exceptional lot comes from Gash Sentayehu, a dedicated farmer in Guji. Impressed by his commitment to quality and the kindness he shows his workers, Bette Buna made a simple agreement with him: if he kept growing coffee this way, they’d keep buying it. In their first year together, Bette Buna introduced anaerobic processing - new to Gash but embraced with enthusiasm. Now, three years in, the results are stunning and he’s producing natural anaerobic lots that continue to improve in quality and grow in demand.
