This delightful coffee comes from smallholder farmers in Gaitania, Colombia, grown at an elevation of 1900m. The beans are a mix of Castillo, Caturra, and Colombia varietals. Following Colombian coffee processing traditions, the ripe cherries are de-pulped and dry fermented for 60 hours, then thoroughly washed in the fermentation tank. Finally, they are dried for 15 days in a marquesina, a specialized greenhouse-marquee method typical in Colombia. The result is a beautifully processed coffee that showcases the dedication and expertise of these farmers.
