Back for a second year, Cleber Cordoba’s Bourbon lot from Huabal, Cajamarca is a real treat. It’s undergone extended fermentation in closed plastic bags for 2.5 days, bringing an extra layer of syrupy depth and a gorgeous vanilla sweetness to the cup. Expect notes of pomegranate, cherry and soft vanilla, all wrapped in a clean, juicy structure. Cleber is part of a new wave of ambitious producers in Peru, experimenting with fermentation and varietals – and it shows in every sip.

A Red and Yellow Bourbon mix from the famous Cajarmarca region that has undergone an extended fermentation prior to washing, to add weight and a lovely syrupy and vanilla sweetness to the cup.
