This coffee variety, discovered in Inza, Cauca, stood out for its high yield and resilience, with genetics linked to Ethiopia’s Bourbon Aruzi. Grown by Jairo Arcila at Santa Mónica farm, the coffee is picked at peak ripeness, sorted for quality, and undergoes a 30-hour underwater fermentation. After pulping, it's carefully dried under controlled conditions for optimal moisture. The result is a unique coffee, combining traditional methods with scientific insight, delivering distinct flavors from this special origin.
