Introduced between 2016 and 2018, these beans undergo an extended 48 to 60-hour anaerobic fermentation process, enhancing their dynamic flavour. Their preparation concludes with sun-drying on raised beds, mechanical drying, and a 45-day stabilisation in GrainPro bags, ensuring both consistency and quality. These beans capture an intense and fruity profile, reflective of the innovative spirit at El Vergel.
