We have been trying to line up a Mexican now for a few years through Ensambles, but had never found the right opportunity to make it work and be able to offer you a lot from the wonderful region, but luckily for us and you, Quetzal changes that. We are very happy to offer a washed lot from the Frailesca region in the state of Chiapas. This lot has been grown by a group of communities in the region, and is made up of Typica, Mundo Novo, Bourbon and Caturra. The cup profile we found to be sweeter than your typical Mexican community lot, with a creamy, slightly herbaceous acidity. The cup profile has melon upfront for that creamy acidity, a sweet grainy granola note fills the cup and makes it ever so moreish, with honey providing a sweet and lingering finish.
